Is there some kind of shortcut to re-summon the Merc once it's dead? Cause having to open the Character tab then going to Mercenary then summon everytime it dies while you're on the middle of the fight it's annoying lol.

Just push the "Delete" button to re summon your mercenary. -
You can also change the key in the settings to one that's easier to get to in a battle.
